I used to live in Arkansas for some time and a buddy of mine's mom used to make the best double baked potatoes. Sadly we haven't been able to maintain contact since I moved to Illinois, but hopefully I can get the recipe.

I'll share it with you all when I do

j bird, i'll have to search the recipe bin when i have some time.... we have lotsa yummy potatoe recipieces.. so i'm not sure which one i was raving over hehehehhe.... but i'll post my favorites to be safe

I wasn't able to get the twice baked potato recipe from my buddy, so I found one that resembles it pretty closely...

4 large potatoes
6 large white mushrooms, minced chunky
1/3 cup butter
2 teaspoons cottage cheese
1/3 cup swiss cheese
salt
pepper
parmesan cheese
chives or green onions
1 large ziploc bag

Bake potatoes untill soft allow to cool. While potatoes cool saute the mushrooms in about 2 table spoons of butter for about 4 mins, then sprinkle with salt and pepper. Cut tops off potatoes and spoon out insides into bowl. Mix in butter cottage cheese swiss cheese and mushrooms add some more salt and pepper. Place potatoe mixture in bag cut off corner and pipe contents back into potatoes shells or skins. Top with grated parmesan and chives bake at 350 untill tops are golden brown.

Okay I would be forever embarassed to post here telling you how many of these things are currently in my house. Wolf and I have a serious addiction that we can only satisfy a couple months during the year... so we tend to stock up, lol.

Pure sugar in a chocolate egg?? Yes please.

On another note, I have an excellent recipe for fudge that I always make around Christmas that's so easy and gets rave reviews everywhere I go. I will post it when I get home from work today.

Bumping an ancient thread Perhaps there are some alliance members that would like to share some of their secret recipies

Uncle O's Reuben Sandwiches...

-4 slices of bread
-chopped garlic, or garlic powder if you're lazy (like me! )
-Pastrami, or whatever floats your boat, I actually perfer honey ham which you can pick up at your local Wal-Mart .
-Sliced Swiss Cheese
-Ranch Dressing
-Butter or Margarine

Preparation: Coat each slice of bread with a thin layer of Ranch Dressing, and sprinkle with Garlic powder/chopped garlic. Evenly place your meat of choice on each slice of bread and cover with swiss cheese. Spread the butter on the outsides of each sandwich. Heat up a skillet and fry until golden brown.

Enjoy!

Here's a meal I like to do if in a hurry, since it doesn't require any extensive preparations:

Hot chicken curry for 4

1 tbsp oil
~ 0.75 lbs chicken breasts
1 red pepper
1 cup cashew nuts
12 fl oz coconut milk
1 tbsp red curry paste
1 tsp fish sauce
1 tsp red chili paste

Cut the chicken into thin slices and stir-fry with oil in a pan. Cut the pepper into thin slices as well. Add the cashew nuts and the pepper slices into the pan and continue stirring for about a minute, then lower the heat and add the coconut milk and curry paste. Stir well, then let it simmer for 5 minutes. Add fish sauce and red chili and serve with noodles.

I guess that vegetarians might get a decent result by replacing chicken with mushroom and dropping the fish sauce.

(I might be wrong with some terms, and would be happy to be corrected).

Almost everything in here is optional, but as they say, the more - the merrier!

Fry some well chopped onions in lots of butter, In a BIG pot. in the meanwhile, peal some carrots, yam, and another onion or two. cut each of those into 2 to 4 pieces, and add to the fried onions. fill with tap water, and add a stack of cut up sausages, (not 250!), a few raw intact eggs, and some sweet chestnuts. if you really want to put yourself into it, roast and peal the chestnuts first. spice it up with some black pepper, salt, hot pepper, curry, crushed clove, and two spoons of honey. I use english pepper, but I doubt it has the same name everywhere. let it boil for a bit, then take out the eggs and the chestnuts, peal them all, and put them back in. you can first cut the eggs in halves. if you are brave enough, take another raw egg and break it into it all, while the water are already boiling. give it a bit more time, till the yam is all soft, and eat away!

be careful though, it's a bummer when you have a wet and steaming-hot piece of yam between your healing sig and your physical resistance.


Alternatives:
replace the sausages with any other ready piece of meat.
forget about the carrots and the yam, those are kids-food!
add a whole tomato or two.

Upgrades:
eat only the solids, and in the soup liquid make some pasta flakes or rice.

Do if you are lazy:
replace the BIG pot with a GIGANTIC one, freeze it all in small containers, and every time you'll be hungry, just throw one of those soup cubes in a pot, and that's it!
(recommended for lone students like me, not family people like most of you...)

Spiced Rum Cocoa

For every 16 fluid ounce serving:

8 ounces filtered/tap water
8 ounces whole milk*
3 1/2 wt. ounces(~100 g) Hershey's Special Dark chocolate bar
1/4 - 1/2 tspn ground Cinnamon
1 1/2 ounce of Rum(1 shot)

* You can use Lactose-free milk or with just water(if you want something closer to the original cocoa drink. The chocolate bar has some amount of milk in it.)

1. Bring water and milk to a bubbling simmer but DO NOT RAPID BOIL.
2. Add chopped chocolate bar and cinnamon, allow to melt and wisk together(immersion blender works well)
3. Remove from heat, add the Rum(and additional sugar if needed)

If you do not drink alcohol, enjoy the cocoa without it. This recipe is much better than the powdered mixes on the store shelves. If you like raspberry/chocolate, put some raspberry preserves in the basic mix and blend them together. Uhmm Uhmm good.

Okay, here's one of Doti's favourite dishes:

Russian Pasta Casserole ( yes, yes don't ask)

Ingredients:
250 grams Fettuccine
200 grams Bacon Rashers
2 onions
1/2 tsp. dried Marjoram (Oregano should be ok, but Marjoram gives a unique taste to it)
500 grams of Quark or Curd Cheese
2 Eggs
1,2 dl Cream
a bit of ground White Pepper
70 grams Butter
4 tbsp Breadcrumbs
water, salt, oil

Cook the fettuccine, make it "al dente" since it will get into the nice hot oven also, so it will soften up there a bit too. If it's ready, drain it and put some oil on it so it won't stick together.

Cut the bacon rashers to thin strips. Clean the onions and cut it to either very small pieces, or if you like bigger pieces of it in your dish cut to thin strips. In a pan heat some oil, and fry the bacon and onion pieces to golden brown and sweet (the onions at least, the bacon should be crispy ). Take down from heat and add the cooked pasta and the marjoram, mix well.

In a bowl mix the quark with the eggs and the cream, add salt and pepper to taste. Pre-heat the oven to 180C.

Get an oven-proof dish, and with some butter or margarine coat the inside. Put a third of the pasta mixture in. Then comes half of the Quark mixture, then pasta, quark and pasta again. Melt the butter (I usually do it in a small cup in the microwave), then start mixing in the breadcrumbs, spread this on the top of the dish. It should be baked for about 30 minutes, if it doesnt get golden brown by that time, turn on the heat to 250C and bake it for 5-10 minutes or until it gets nice golden brown.

It's a quite savoury dish, the preparation may seem complex, but everything can be done almost the same time, so even if you're not a lightning bolt in the kitchen it's ready in an hour with everything. It should be enough for four people or six if there's starters or a soup or something
